You will have to let us know what it tasted like Piggy. I've never tried sambar before, as I haven't hunted them much, as there aren't many in my local area.
Well done mate. I know that you're in the enviable situation where you seem to have numerious opportunities to take sambar, but you usually hold off for some reason. That's understandable, but it doesn't hurt to take one for the table every now and then. In fact, I'd rather see someone take a succulent hind to a big rank stag anytime.

Great effort, well done.

Mick, I cooked up part of one of the back straps for some Kiwi friends on Monday night.
Marinated the meat in some nice Red wine for about 1.5h seared it on the BBQ on each side and finished it off in the over for 15 minutes.
I made a sauce out of 1 cup red wine (the same bottle as used in marinade) some butter and a hand full of cranberries brought it to the boil and let simmer until it thickened.
It went down well and tasted great.

You will have to come up for a hunt again after we heal Then we can test some recipes in the camp oven

With the meat from the Hind after butchering I give most of it away to local
residents of my street and mates and kept the back straps some for making
Salami and sausages.
While in hospital my wife said the neighbour ( a retired Chef) had brought me
back some of my venison which he usually does.
How good do these look Venison and vegetable pies
Tasted bloody fantastic also.
