Axe do you eat the backstraps? or just the rear quarters?
and how long do you rest the meat same as for rabbit or longer ?

I keep from the ribs back, the backstraps & internal fillet are the "cream" IMO, from ribs forward goes to my pets, including heart, liver & kidneys (occasionally I will use the shanks & shoulder for a stew)
As for meat cuts I treat goat the same as you would a lamb
When possible I take the carcass back complete and hang it for two or three days to allow the meat fibres to "break", when unable to do this, e.g. a red deer, I cut it into joints (and bust my hump making several trips) and hang them that way

well done there, not just the hunt but getting rid of the wild boer. ive been noticing a few in the hills lately. there deffinatly spreading there genes around.
