Maultaschensuppe, Zwiebelfleisch und Apfelküchle
mouthpocketsoup, Onionmeat and applecakies

FOREPLAY:

take a big piece of meat (when cooking for 4, take meat for 6) and roast it in big pot along with some thick marrowbones, add halfed onions, few carrots and other soup vegetables.
when roasted brown poure water on top and slowly cook till the meat is very soft and tender.
Put the meat away to cool down, pour the rest through a sieve, and if the broth is to strong add water, if too weak add a bit of instant broth.

WARMUP (starter):

Make some pastadough out of eggs, flour and water and knead well.
Take 80gr. of minced meat (from the same animal) per person and fry till done with some chopped onions. Add more than the same amount of chopped parsley and let it stir till the parsley gets soft.
Make Ravioli out of the Pastadough with a filling of the parsley-mincedmeat-mixture but make em bigger! About 5-8 cm. length and width.

Put away 1/4-1/2 litre of the broth from the foreplay and get the rest to a boil. Slip the giant-raviolis into the broth and let it simmer till the pastas done and the inners hot.

Three of em in a deep bowl with some broth and a few fried onions on top will make everybody a fan of whts still to come!

THE MAIN ACT:

Slice the meat and fry it in some oil or butter till it gets a little crispy on the outside and take it out of the pan.
Put the same amount of onions chopped to thin rings into the pan and fry till they get brown. scatter some flour over the onions and stir then add the rest of the broth and some sweat cream. Pepper, salt sugar (or experimental some soy sauce) to season. Place the meat back in and serve with noodles or mashed potatoes.

The AFTERMATH:

Make a pancake dough but use only half he amount of milk you would normally and replace it with dark beer.
Core and peel some apples and slice em to rings of about 0,5-1 cm thick.
Cover the apple slices with the dough and deep fry them for about 5 minutes. The inner apple should be soft, the outer dough a little crispy.

Serve with whipped cream or sugar and cinnamon(original) or vanilla ice cream!
