'making jerky' means something completely different where I come from but I shall have to try this, probably much healthier!

Howdy

I bought a dehyrator the other day - a Sunbeam - which is good for the money. What I did was freeze the corned silverside first and then was able to cut quite thin slices.

I then marinaded overnight in a mix of soy sauce and the Jack Daniels BBQ sauce - either the standard or the smokey. This I left for 24 hours in the fridge..

Quite thin sliced (and I am talking 2mm-3mm) with the heat at 75degrees (setting 3) my 5 trays dried in 5 hours - yummers.

Having said that I also did some the other day and just used the corned silverside as is and that is perfectly fine.

i haven't made jerky in months. getting me keen all this talk...

i use silverside stripped and treaded onto scewer sticks at one end. then dangled through the oven rack/shelves, in the oven on about 80*C for about 12-18hrs (or when ready) and with a bit of doubled over cardboard in the oven door to keep it slightly ajar. i strip against the grain.

marinated with any number of things. ABC sauce, sweet chilli, bbq sauce, tomato sause, soy sauce, herbs, garlic, onion, curry, and any mixture of.

mmmmmm....
