Mate I soak the meat strips in a brine solution with brown sugar, salt,
spicy sauce, garlic or any thing else you think might be good for
a few hours.Dry on a paper towel and put on a wire rack on some
baking paper cook it in a oven on very low heat with the door a little
ajar until it looks about right.I have a old wall oven just for this sort of thing and I also put a baking tray with saw dust on the element in the oven and this gives it a great smoked taste as well.
Hope this helps.
Cheers KIM

that sounds pretty nice. as so simple i should have thought iof it lol. i have a smoker box and a food dehydrator machine. what i'm planning to do is soak the meat in a nice brine then smoke it for a while and then put it in the dehyrator. this sound about right to you?

If it can be eatin I probley have.
The smoking part really makes it a bit special.
I also do chiken legs the same way and little lamb cutlets.
You can also sprinkle bbq seasoning on before you cook them.
