Jerky

Having a go at some homemade jerky in the oven but I think I have applied to much heat. Will the jerky still keep ok being cooked and dehydrated rather than being just dehydrated?
Recipe for marinade was- half teaspoon of mixed herbs
-250mls of soy
-table spoon of honey
-2 teaspoons of chilli flakes
-salt/pepper
-2 tablespoons sushi vinegar
Tastes awsome :D

How much meat to that much marinade Steve?

I just did another batch today yum.The slower you dry the better mate if you have the heat to high it seals the outside so the moisture does not get out as well and it may go off if not refrid. and it is kept to long.

dont do what i did, last time i made a batch,it was about 11pm when i turned the dehydrater off,and i pigged out on the warm jerky then went to bed an hour or so later i woke up with pains in my chest ended up in hospital all night with wires everywhere and a drip in my hand,first case of heart burn i ever had, was still scarey though... :lol:

Yeah I have to go a bit slower but in the end it was dry and didn;t look to bad, certainly tasted good and is now gone :D

I could have easily eaten the lot in one go :D glad I didn't try :lol:

Steve, we have a dehydrater here. Admittedly Sue uses it a lot. Bring your jerky [to be] [unjerky???] here....we will not tax too much. You do realise that it all shrinks. Serious problem shrinkage.

Sorry steve, its all ruined if heated too quickly it simply wont keep. However I can come over and help you consume it b4 its too late. No point having a secondary disaster...

It actually worked well in the oven and sorry guys it is all gone :P . Myself and the dogs loved it :) . Steve

I use a dehydrator, even though I live in a more dryer area than most :)
I maranade the meat, usually kangaroo, over night and then leave it in the dehydrator the next day and package it and then freeze it into appropriately sized packages. If I don't hide it the three kiddies find it and then well there is none left for me..... they even eat my hot chilli versions.
Home made jerky is the goods especially if the spices come from your own garden too :)
we should start a jerky swap program.

:)
