I have two marinading in my fridge at the moment, nothing wrong with them if they are young. Ideally I would be after a nanny for meat, but if you can't find the nannies and you can find the young billies and you want to fill the freezer, the billys taste fine IMO, as long as they aren't old billies...

We have made Jerky, prosciuto and speck and sausages from most game that we have taken, but mostly venison.
I prefer a simple steak or a roast though

Jeff, I took the shot from around 30 meters, although at the time I never really noticed the distance, I was just concentating on the spot I wanted to hit. It is definately steep country, and you usually have to work pretty hard to get the meat out of there and back to the car, but that is all part of it.
