I have two marinading in my fridge at the moment, nothing wrong with them if they are young. Ideally I would be after a nanny for meat, but if you can't find the nannies and you can find the young billies and you want to fill the freezer, the billys taste fine IMO, as long as they aren't old billies...

I got this red hind from 10 meters the other day.
2nd deer with the curve, but my first ever red. They are a heavy animal to carry out :D

We have made Jerky, prosciuto and speck and sausages from most game that we have taken, but mostly venison.
I prefer a simple steak or a roast though 8)

Danny shoots a 55# huntsman and it is one beautiful bow to shoot.

It is definately steep country, and you usually have to work pretty hard to get the meat out of there and back to the car, but that is all part of it.
